Super Easy Kid-Approved Chicken and Rice

There’s nothing I hate more than having to read a long, drawn out story before the recipe. So here’s the recipe:

Directions

  • Boil all four bags of rice per the box label instructions (usually ten minutes).
  • Drain the rice and set aside.
  • Reduce heat to medium. In the same pan or pot, melt the butter, then add the drained chicken, salt, and pepper. Sauté for two minutes.
  • Add cream of chicken and milk (add more milk for thinner sauce, less for thicker). Heat for two minutes.
  • Add rice stirring to combine. Add salt and pepper as desired. Heat until bubbling.

Feeds 6-8 people easily, with leftovers.


The Story

This is one of the easiest meals you can make this week . The ingredients I listed are $12.74 shipped to your door in a day or two, saving you a trip to the grocery store. But the ingredients can be had for as cheap as $6.35 at Walmart if you’re willing to make the trip (check prices in the Walmart app for local prices). That’s for the off-brand rice and cream of chicken and a chilled rotisserie chicken instead of the canned variety.

My kids absolutely love this recipe. I only recently started making it, and we’ve already had it several times, with them asking for it in advance. Any time I can feed five kids and two adults for less than $7 (or even $12 if I order online) is a huge win.

This is a sure-fire 10 out of 10 recipe for easiness and crowd appeal. Cheap, delicious, and feeds everyone for around $10.

Is it the healthiest option? No, not necessarily. I get that canned items aren’t always the best option. But with grocery prices where they are, and with parents stretched thin already, everyone needs a quick go-to meal that everyone eats. And you could always toss in some frozen peas or broccoli for some added flavor and nutrition, if your kids will eat it.

There are a lot worse options out there that cost a lot more. So, for my big family, this is a winner-winner-chicken-and-rice-dinner.

    1. Yes! It’s perfect for those nights when you just want something quick without a lot of prep or cook time. This is literally boiling water and heating everything together in the same pot. One pan/pot meals are my favorite because I don’t have to do a lot of dishes afterward either, which is another win! Thanks for reading!
